Enrique has been an entrepreneur in the food industry since the beginning of his career. He has plenty of experience in product development as well as commercialization. Very passionate about combining food, technology and gastronomy to create foods that are affordable, nutritious and delicious. He graduated from Economics with a concentration on behavioral economics. He loves hiking, boxing and experimenting in the kitchen new recipes.
Flavio has been passionate about sustainability since his early days. He combines experience from biotechnology, agriculture and post-harvesting operations. Believer of obtaining more value out of the things we commonly think of as waste and discard. He holds a MSc in Chemical and Biological Engineering with a focus on waste revalorization. He is a passionate soccer player and amateur street-singer.
Fabiola is a Doctor in Biotechnology from Monterrey Tech, Mexico. She has experience in the development and optimization of extraction of fiber (soluble and insoluble) from different byproducts with the objective of their application in Food Industry, as an additive or ingredient rich in nutraceuticals. Dr. Ayala passionate in the development of functional food products with nutritional balance and great acceptance by the consumer.
Sofía is a chemical engineering student, nature lover and continuous learner. Passionate about sustainability, green technologies, and human rights. She has participated in different projects focused on energy efficiency, environmental conservation and use of resources frequently considered waste. In her spare time she enjoys hiking, running, watching movies and trying out different places to eat.
Ariadna is a biotechnology student soon to finish her career who is very curious and likes to learn new things. She has been research assistant since two years ago in different projects of biotechnology related to sustainability. She is a good chef of desserts and she likes poetry, drawing and dancing in her free time. She loves animals.
Soon-to-be-undergraduate of International Relations, Filiberto has had a heartache regarding worldwide problems in which sustainability, human rights and international politics have a major role. Passionate about equality between humans, he vows to help out the food industry into becoming much more inclusive and evolving for a greater good. He’s also into attending flea markets, walking his dogs, and reading near to anything sans magazines.
Valeria is currently studying animation and digital arts, in which she has learned 3D modeling (creating objects and characters), sculpture (digital sculpture and with clay), drawing, 3D animation, she also has participated in two live-action short film productions, and others. She really like graphic design and has made some projects related with design. In her free time she enjoys watching movies and cartoons (for entertaining and research purposes).
